At The Lighthouse Retreat, dining is an intimate, retreat-exclusive experience. We cook only for our retreat groups, making every meal personal, nourishing, and deeply connected to island living.
We serve farm-to-table meals using fresh local seafood, tropical fruits, garden vegetables, and free-range eggs. Every dish is made with handmade coconut oil, fresh coconut milk, and bold island flavors.
Our menu includes traditional Ron Don, grilled lobster, plant-based, vegan, and vegetarian options, all designed to complement the transformation your group is creating. Island Brunch – Fried eggs with a tropical fruit & papaya salad, served with coconut bread, rice & beans, and optional Nicaraguan cheese.

Warm Tropical Oats – Creamy oats topped with granola, chia seeds, peanut butter, caramelized peanuts, toasted coconut flakes, and fresh tropical fruit.

Classic Coconut French Toast – Coconut bread French toast with granola, toasted coconut, and caramelized peanuts; served with star fruit marmalade and seasonal fruit.

Tropical Island Salad 🥗 – Organic greens with watermelon, papaya, cucumber, mint, purple onion, avocado, and caramelized peanuts, tossed in balsamic dressing. (Can be served with or without cheese.)

Veggie Quesadillas 🌱 – Black beans, corn, peppers, tomatoes, onions, and fresh herbs in toasted tortillas, served with a side of spicy pico de gallo.

Island Breakfast Burrito – Fluffy scrambled eggs, hearty beans, diced tomatoes, and fresh herbs, wrapped in a warm tortilla with optional cheese.

Falafel Wrap 🌱 – Crispy chickpea balls fried in coconut oil, wrapped with cabbage, tomatoes, and spicy pickles in a warm tortilla.
